Christmas Cookies--Triple Layer Peppermint Bark

I'm not sure where I got this recipe.  Maybe from a blog?  This is the 3rd or 4th year that I've made it.

If you want to use a regular sheet pan, that's fine.  I like using the silicone molds, because the peppermint bark comes out in cute shapes.

Using a sheet pan, you would:

Melt 8 oz dark chocolate and spread it onto a parchment lined sheet pan.  Chill for a bit. (The pan, not you, but by all means, feel free to relax while the chocolate is cooling.)

Melt 8 oz milk chocolate, and spread it over the dark chocolate.  Chill.

Melt 8 oz. white chocolate and spread it over the milk chocolate--wait, don't put it in the fridge yet!

Chop about a cup of peppermint flavored Oreos and gently press the crumbs into the white chocolate.  NOW chill the bark.

Break into pieces and enjoy. :)

Like I said, I like putting the candy in molds.  Last year we used bigger Christmas tree molds, but the pieces of peppermint bark were HUGE.  I found these molds on clearance after last Christmas--they make a much more manageable sized piece of bark.

Christmas trees & gingerbread men.

Piping the dark chocolate in.  We just use boring old freezer storage bags.

Melting more chocolate.

Wal-Mart didn't have the peppermint Oreos (I had seen them, and thought, of course they'll still have them when I need them! Sigh)--I was lucky to find the Cool Mint Oreos.

Chopped up by using my Food Chopper.

The white chocolate goes on last, before the crushed Oreos.

Adding the cookie crumbs.

I'm always amazed at how easily the bark comes out of the silicone molds!

See the triple layers?  Mmmmmmmmm!

Four dozen trees, ready to go.

Now for the gingerbread men--I was really worried that their little arms or legs would snap off.

Needless worrying--they were all perfect!

A delicious little man. :)

We just throw a few of these in each cookie--a nice addition to all of the cookies!
